Chicken Piccata & Four Cheese Risotto

Lo and behold.. the finished product. Here is the Chicken Piccata I made from the recipe I posted here earlier today. I added a blend of fresh shiitake and baby portobello mushrooms -something that wasn’t included in the original recipe. I just tossed them in the skillet with the onions and garlic that I allowed to sweat for 5 minutes. This is an example of how to make good use of the Super Cook link I included in my previous post. This dish was a huge hit with my family. My son had three helpings!
