Snowball Cookies on Sunday

I love Sundays. That’s when I find myself spending the mosts time in the kitchen with my kids. Today I made Walnut Snowball cookies at the request of my husband. His grandma used to make them during the holidays before she passed away. Now it’s something that the girls in his own house can do for him.

I already had ground walnuts in my freezer from when we made Kieflies a couple weeks ago. The sugar in the Ziploc bag was also used with the nuts at the same time so I reserved it separately for the next time I made something with walnuts. These cookies are so easy to make. You simply sift 1 cup of cake flour, 3 tablespoons of granulated sugar and a pinch of salt into a large mixing bowl. Add 1 1/2 cups finely chopped walnuts and combine.

Add 1 teaspoon of vanilla extract and 1 stick of unsalted butter, at room temperature, cut into small pieces. Work together with your hands just until it comes together. Don’t overwork the dough. Roll into balls and put them onto a cookie sheet about an inch apart. Bake at 300 degrees for 35 minutes. Pull them out of the oven and give them just a few minutes to cool (so they’re not too hot to touch). Pour about two cups of confectioners sugar into a dish and, while still warm, roll the cookies in the sugar. Makes about 2 dozen cookies.

There are several different names for these. Italian Wedding cookies are made with almonds. They’ve also been called Russian Tea Cakes and there are also Mexican Wedding cookies. :-)

These remind me of the secret kiss cookies minus the Hershey Kiss, baking cookies have always been a family tradition at my house to, I remember when I was a little girl my sister and I would help my mom make all kinds of cookies then give some to our teachers, friends, family, and some sweet little old ladies.
