Double Chocolate Chunk Oatmeal Walnut Cookies – Great Food Blogger Cookie Swap

It took me a while to figure out what kind of cookie I wanted to make for the Great Food Blogger Cookie Swap. I first thought of doing a tradition style Christmas cookie with a twist, but decided on a good, hearty cookie packed with tons of love. I came up with a Double Chocolate Chunk Oatmeal Walnut cookie. It’s a mouthful, I know.. but pretty delicious, confirmed by the awesome folks at Kitchen Savvy Mom Headquarters – my family!

Ingredients:

* 1 cup rolled oats
* 2 cups all purpose flour
* 1 teaspoon ground cinnamon
* 1 teaspoon vanilla extract
* 1 cup dark brown sugar
* 1/2 cup granulated sugar
* pinch of salt
* 6 ounces dark chocolate, chopped into bite size pieces
* 6 ounces white chocolate, chopped into bite size pieces
* 1 cup walnuts, rough chopped
* 1 cup walnuts, chopped finely
* 2 eggs
* 2 sticks unsalted butter
* 1 teaspoon baking powder

In a mixing bowl combine the dry ingredients: rolled oats, flour, cinnamon, salt, and finely chopped walnuts. In a large bowl or stand mixer, beat the sugars and butter until fluffy. Add the eggs and vanilla and beat until combined well. Slowly add the dry ingredients and mix until combined, but do not over work the cookie dough. Fold in the rough chopped walnuts and both the white and dark chocolates with a spatula. Drop by melon baller (or tablespoon) onto ungreased cookie sheet and bake for approximately 12 minutes (give or take a minute or two depending on how gooey or crispy you like your cookies) at 350 degrees.
